Going on hour 14 of smoking my first brisket.  Doing it on a gas grill that we bought about a month ago.  I figured 10 hours would be plenty, but it just won’t get up to temperature.  Every thing I’ve read says you want at least 190 degrees, just hit 180 about 10 minutes ago. (yawn)  Can’t go to sleep without tasting it.

I love brisket!  I’ve never done one on a gas grill but, if I do a whole one, I generally smoke it for 12-14 hours.  I have a guiness based mop that I use about every hour (also drink one every hour).  It’s always a hit but it’s real labor intensive.  I think you just inspired me to do one for the labor day bbq.  Let us know how it turned out.

About 2 a.m. would have been about right, WTF, plenty of left overs though.  Came out pretty good.  I just started messing around with smoking things -  did St.Louis style ribs a couple weeks ago, also came out good.  I was using an Old Style based mop, with a fair amount of Dijon mustard, cider vinegar, and garlic mixed in.  Next time, I’ll start a lot earlier, lol.

Murdy,  I am going to give you some excellent advice about smoking meat…go to:  http://www.smokingmeatforums.com/  Join. Jeff’s email group and get his updates, recipes, etc.  Very good resource for everything you ever wanted to know about smoking meat.  I have a Masterbuilt 30” Electric Smoker and have made numerous delicious meals in it.  Enjoy your future smoking recipes…

Thanks, Bob, for the link.  I’m pretty sure I’ve looked at the Masterbuilt Smoke you have—does it have a digital read out on top?  I’ve been looking at smokers for a while, but, unfortunately, have other things to spend my money on first, so been using the grill.  Are you happy with the Masterbuilt?

I absolutely love my smoker. You can usually find it on amazon for less than $180. Yes it does have the digital read out on top. Mine works excellent. I bought one for my brother a couple of years ago for Xmas at bass pro during the Black Friday sale. Then last year my bro and I got one for my buddy who lets us hunt his families property up in Wisconsin. Don’t waste your time money buying the smoker with a window. It gets all dirty from the smoke that has seasoned the smoker from previous smokes.

once you become well adapted to smoking your gas grill will turn into a shooting target…......lol…...ALL GAS GRILLS MUST DIE!!!!!!!

I understand the sentiment, Coonass, I’ve mostly been a kettle grill guy.  But the convenience factor, especially on an after-work evening, is pretty nice.  My goal, when I get a little extra cash, is something like GalenaBob has.
